Well, the apples to NOT use are red delicious or any other soft apples when baking. These work best for apple sauce and salads such as Waldorf.
One exception are Cortlands are good for both pies, baking, or raw.
Fuji, gala, braeburn and other sweet crisp apples are great for eating but really don’t have enough juices for desserts and don’t break down well.
My final conclusion after much trial and error over the years is that Granny Smith are best for pie. They are tart and firm, contain lots of juice, and are least likely to get mushy in a pie.
