You must use a cooked cheesecake to make the fried bites. An unbaked one is not firm enough to withstand the hot oil and would melt and break apart. If you're not into baking your own, then purchase one in the freezer showcase at your market. Trader Joes has a great one. I'm sure that Sara Lee, which can be found in any market, also would work.

I have a question about the Fried Cheesecake Bites. Can you us a cheesecake recipe that you mix up from scratch that doesn't have to be cooked. Are does it have to be a recipe for a cooked Cheesecake? Thanks

To make Fried Cheesecake Bites, you will start with a cooked Cheesecake. Cut it to the size of the bits you want. For the breading you will need three different bowls. The first bowl should have 1 cup of flour. The second bowl cracked 2 eggs into it. The third bowl should be the 1 cup of Graham cracker crumbs.
To start, place the bits into the flour first. Make sure that the bits are complete coated. Then scoop out with a slotted spoon, place the bits into the egg bowl, again making sure that they are complete coated. Scoop out of the egg with a different slotted spoon and place into the Graham Cracker Crumbs. Once the bits are completely coated with Graham Crackers Crumbs, freeze your bits for 3 hours before frying.

Heat your oil to 325. Drop you bits a couple at a time into the hot oil. Let fry for 1 minute or until they begin to float. Pull them out and place on a paper towel to drain, and chill slightly

Please note: You can substitute the egg with buttermilk. Either way you will have very good bits!
