Most of these menus take their cue from the main beef course. Your beef roast, assuming a rump or round cut, should be braised. It is in this process that your meat become infused with flavors and in your selection of aromatics, stock, and herbs, that your beef’s “style” or cuisine influence comes into play. In terms of technique, always bring your roast to room temperature and season well. Brown your meat in a dutch oven with aromatics (garlic, onion, etc.) Delgaze your pan with red wine or stock.
