Thanks for your question about the sea scallops. Yes, you do want to remove the membrane before cooking, as you would otherwise have to cut through it to eat and once cooked it will be far tougher. Make a small incision and then pull off gently, otherwise, you may leave other connective tissue behind. We don’t know for sure, but believe the membrane in question is the gills.
