Grilled Prime Rib with Chimichurri Sauce
- Grilled prime rib is a flavorful and rich meat that does well with few seasonings. The chimichurri sauce, an Argentinian steak house speciality, is easy, light, requires no cooking! and has the fresh flavor that balances the smoky grilled flavor of your meat.

Marinated and Grilled Portobello Mushrooms with Vidalia Onions
- First marinate portobello mushrooms and thick slices of Vidalia onions in olive oil, balsamic vinegar, salt and pepper. Then, grill and set aside. They can be served room temperature.
- Portobellos are just so good grilled and the sweetness of the mushrooms and onion will compliment the boldness of your chimichurri sauce.

Couscous Salad with Dried Fruit
- This is a great do-ahead dish and will even taste better the next day.
- I’ve suggested this salad mostly because of its softened texture when served the next day and because you may not want to fuss with an oven baked potato. A late spring green salad would be great too, especially when served with a mustard and thyme vinaigrette.

Tomatoes with Blue Cheese
- Find good looking tomatoes and dress with salt and pepper, olive oil and sliced green onion tops. Top with crumbled blue cheese.
- Blue cheese is such a good compliment to beef and really shines with tomatoes! Consider purchasing a finer quality cheese such as a maytag, stilton, or nice ripe gorgonzola.
