Chef Gwin says: “The parchment usually burns at that high a temperature. I’d recommend aluminum foil for that application. Piecrust is good in the middle of the oven — that’s where the heat will be most even. Sylvia, take your crust out about 5 minutes before the recipe indicates. Then remove the beans and foil. Put your crust back in the oven to let the top of the crust dry out while you finish baking.
