scrambled-eggs.jpgJulie wants a quick and healthy way to make egg scrambles with fresh vegetables in the mornings.

I have three different suggestions.

If you have a mini food processor, use it to chop your veggies and whip your eggs at the same time. Then cook immediately.

Or, you can prep your veggies the night before and store in a baggie. Then, while the eggs are firming up in a hot pan, dump the pre-cut veggies in.

The third option is to use frozen veggies. Saute them in a little bit of water to defrost them, then drain the water, add a bit of oil or non-stick spray and add eggs to hot skillet.
