Cary wants to cooking a big, 27.5 pound turkey in a convection oven at 350 degrees. The question is - how long will it take?

Cary, in a conventional oven, a bird that large would take about 5 1/2 to 6 hours. The general rule for converting to convection cooking is to reduce the temperature by 25 degrees and the cooking time by 25 percent. I would plan on cooking your bird at 325 degrees for 4 1/2 hours in your oven. However, be sure to start checking the bird’s internal temperature after 3 1/2 hours. If you don’t have one, buy an instant-read thermometer and check the temperature by inserting the probe into the inside of the thigh, being careful not to touch the bone. When the temperature reaches 165 degrees, double check the temperature by inserting the probe in the other thigh as well. After removing the bird from the oven the temperature will continue to rise at least another 10 degrees.
