Mary is hosting an 80th Birthday Party for her dad. What a fun time this will be. Mary’s serving a large (16 pound) boneless beef roast and needs to know how long to cook the roast and how to cook something that big.

Roasting the beef will be a breeze. You’ll need a big roasting pan and a meat thermometer. Place your boneless ribeye in a roasting pan, season generously with salt, pepper, fresh or dried thyme and/or rosemary. Roast at 450 degrees for 30 minutes. Then, reduce the oven temperature to 325 degrees. Roast for an additional 3 -3 1/2 hours, or until internal temperature reaches 125-130. Let roast rest 15-20 minutes before carving.

Tips:
Use middle rack in your oven.
Do not cover your roast.
To test with a meat thermometer, insert into the middle.
Use a large enough roasting pan so there’s some room around it. Low- to medium depth is fine. If using an aluminum disposable pan, double or triple it for stability.
