Here are some vegan suggestions for breaded eggplant.

Joe Kaye in Brooklyn is breading eggplant, presumably for the purpose of frying it, and would like to know if he can substitute the egg and/or milk, for dipping and binding the bread crumbs to the eggplant, for something that is animal-free.

The answer is a resounding yes, Joe. There is almost always a vegetarian or vegan option for the vigilant veggie chef. You can dip the eggplant into soymilk, for instance, instead of dairy milk. Also, Ener-G and other egg replacement product exist that are versatile and relatively flavorless, although you should read the label of other brands as they may contain egg whites. Other possible dipping solution substitutes might include: oil (use a brush) or soy butter.
