When placing the batter in your pans, please make sure you make the batter level. Then before you place them in the oven, just tap the pans lightly on the counter. What that will do is get rid of the air bubbles from the gas caused by the rising ingredients. When your cake is finish and you find it is still high in the middle, simply trim the excess with a bread knife. Remember to place what was the top at the bottom when icing.
