I feel like I am taking a test in culinary school again. Here you go!
1) Three ways to prepare a pan for baking are to spray with non-stick spray, grease and dust with flour, or to spray with non-stick spray and line with parchment.
2) When baked goods are cooled on a hard surface, the moisture that they expel will have nowhere to go. That plus the residual heat will condense at the hard surface causing sogginess.
3) Three ways to tell that muffins have been overmixed are that the batter is slightly tough, they fail to rise well, or the batter is slightly stringy (which means you’ve started to develop gluten).
