I’ve purchased “bamboo” type shaping baskets for baking artisan breads. Do I grease and flour before placing dough for the second rise? Also, can I bake in them or are they just for shaping? Thanks!

These are balled brotforms in Germany and bannetons in France. Before using the first time, spray with something like Pam.
Generously flour and add bread. Once the bread has proofed, turn it out on your peel and bake.
Shake any loose flour out of the basket, but don’t wash it, instead allow a flour coating to build up inside as you use the brotform.
