Buttermilk, which used to be the by-product of butter-making, is today simply low fat or nonfat milk treated with a special bacteria. It is thick and slightly acidic which makes it taste very rich.
We can also substitute several mixtures to make our own at home if we just don’t have buttermilk. The following list is one that I have tried for a variety of recipes. The one I like the most and use the most often myself is the lemon juice substitute. Try them all at home and let us know what your favorite one is.
SUBSTITUTIONS FOR 1 CUP OF BUTTERMILK (SOUR MILK)
Use 1 cup plain yogurt.
Use 1 Tbsp vinegar or lemon juice plus enough milk to make one cup and let stand for 5 minutes.
Add 1 3/4 tsp cream of tartar to 1 cup of milk.
1 cup of sour cream.
