I am going to be cooking breakfast potatoes in a skillet when I go camping. I usually parboil the potatoes that I have cut up so that they will cook all the way through when I do it in the skillet. My question is if I parboil the cut potatoes the night before will they keep till the next morning. If so whats the best way to store them. Thanks! Justin

Yes, you can certainly parboil the potatoes the night before. Just store them in an airtight container in a cooler overnight.
Justin, when I go camping I like cutting the potatoes in tiny cubes and then cook them quickly in some oil on high so that they begin to form a crust. Then pack them away in a plastic container when cooled. The next day you can start your peppers and onions and then add your potatoes and finish! Enjoy!
