I have a recipe for Chocolate Chip Cookies it calls for 1&1/4 c. coconut oil to 2&1/2c. whole wheat pastry flour. The cookies are very oily so I have cut back to 3/4 oil…still seem to be to oily?

Coconut oil is very oily. If you are not using this for health purposes, then trying using either half shortening, butter or margarine and the other half coconut oil. Your cookie should be much dryer. You can always even reduce the amount of coconut oil more than that but replace it with another fat. Start with the half and half and if it doesn’t work, reduce it even further. I know the great benefits of pure oil but if you don’t mind reducing, you will enjoy the cookies much better.

Thank You for your response in regards to coconut oil. I have been using it for health reasons, and would like to continue to though I am struggling some on the amounts. Is there a way for me to send the recipe to you so you can review the portions to see if they are correct. I have tried this recipe many times and it seems to not be correct. The edges of the cookies become hard after they have sat for a very short time. Thank you!
