The one time I tried making a potato kugel (pudding), by the time I finished grating my potatoes, they were discolored and unappetizing. I really want to make this, but I am afraid this will happen again. How do I not make a yucky gray casserole?

Try mixing the rest of the ingredients together before peeling the potatoes. Don’t wash all the potatoes together. As soon as you rinse each potato, grate it directly into the egg… mixture.

Great advice Dina, thank you! Dina is absolutely right. If you hold your peeled,whole potatoes in water and grate them directly into the egg mixture you can avoid much of the discoloration. Also, with potato kugel, it’s really important to work quickly. One more thing to watch for and that is to make sure that the kugel get fully cooked, especially in the center, as undercooked potatoes will be a gray color.

the magic is in salt water… keep your peeled potatoes, and subsequently the grated potatoes, in salt water as you work.
when you are done grating, pour the salted potatoes and water through a sieve, then get out the rest of the excess water by squeezing the potoes in a tea towel over the sink.
my grandmother, who made the most beautiful kugel in the world, taught me this.
