I’m hosting a graduation party for 60 guests. I need a chicken breast recipe that is not too spicy, but is flavorful that I can make ahead and then place in the oven the day of the party to finish cooking, just like a caterer would do–any suggestions??

Sure, I’ll just give you the basic Chicken Breast Recipe that we use for Chicken sandwiches, etc… when we cater.
10 cloves garlic,
1 bunch thyme, picked
1 bunch parsley, picked
1 bunch oregano, picked
1 bunch chives chopped roughly
Oil as needed
Salt and black pepper to taste
(this is your marinade)
(and of course you can throw whatever else you want in the blender at this point, maybe a little lemon juice, or shallots, etc…)
Puree all the above in a blender.
Marinate the chicken breasts in the marinade for 2-3 hours, then fire up the grill and mark each side of the chicken breasts with nice hatch marks. The only thing to be careful of is oil dropping into the flame, which will cause flare ups. So you can set the breasts on a tray and allow excess oil to drip off before placing them on the grill.
Only use the grill to place nice marks on the breasts, do not cook all the way through. The next day, place the breasts in the oven at 350F for about 10-12 minutes until the internal temperature reaches 165F.
Quick, Simple, Deliciously Easy Chicken.
One of my favorite chicken ‘bakes’ is the following:
Mix a dry rub of salt, pepper, garlic powder, oregano and paprika. Toss with diced onion and fresh chopped rosemary and basil. Bake breasts for 1 hour at 350 degrees. Or, bake for 30 minutes and cool and cover. Refrigerate overnight. Finish baking when your guests arrive.
I prepare this dish - sometimes upwards of 50 breasts - using this technique for outdoor parties and serve at room temperature. Why not just completely prepare a day in advance? It’s great party food.
