The usual rule of thumb that I go for in my kitchen is that 5-6 oz protein/sauce, and 3-4 oz starch, 3-4 oz vegetables. At this point, the diner will be consuming 12-14oz of food, almost 1 pound. Which is plenty. If you are catering for a group of VERY hungry people, or you want to be sure you have leftovers, always figure 8 oz protein, 4 oz starch, 4 oz vegetables per person. That’s what I have done, and I have never run out of food, and usually have just enough leftovers. If your budget is tight, of course you can figure on less. The important thing to note here is that we are talking about “edible” portion quantities, so that if there is a bone on your steak, you have to deduct that weight for the correct portion size. I’m trying to capture that Good Humor creamsicle flavor for a cheesecake I’m making and I’ve tried the typical 1 tsp orange extract with 1 tsp vanilla extract that’s so common on the Internet these days, and I find that it doesn’t work. I’m just not convinced.
