This information is appropriate for a 4 pound roast, usually either a chuck roast or a brisket trimmed of fat.
Preheat oven to 350 degrees and in a heavy casserole pot, add 1-2 Tablespoons vegetable oil and brown meat on all sides. Add sliced onions and garlic, add 1/2 cup of water or beef stock, cover with lid and bake in oven for 1 hour.
Then remove from oven, turn roast over and put cover back on. Return pan to oven for another hour.
Once cooking is finished, remove meat from pan to rest for about 20 minutes before slicing and serving. Garnish with the cooked onions and garlic if you like.
In a crock pot I use lipton beefy onion soup for flavoring and salt, pepper, garlic, any spices you want. You can put it in early, with potatoes and carrots onions and by the time you get home its done and tender.. I would put it in at 7:00 am and be home by 4:00..I cut every thing up the night before….And set it on high….But if you not working or at home to do this I just brown the meat in a skillet with margarine and then get the roasting pan. Put the potatoes, carrots onions and meat at 375 degrees oven temp for 3 hrs. You can always turn it down lower and cook slower and this it gonna help it be tender too.
