I’m planning to make potato latkes for a large group (30-40 people).
I know they are best freshly made, but don’t want to spend the whole party standing over a frying pan. Can I make them ahead and reheat and have a good result–nice and crispy and not soggy? How?

Shuli,
Reheating them in a 400F oven should restore some crispness. I would preheat the baking sheet as well.
