Shirley Corriher, the Food Sleuth, recommends storing your eggs upside down in the carton which helps center the yolk. But, back to the question. After boiling your eggs and draining the water - put them back in the pot. Knock them around a bit so they crack and then cover them with really cold (you can even add ice) water. Remove and if you have time, let them sit for a few days. The older the egg, the easier to peel generally. Some eggs will just cause problems though! Try using your fingernail to get the membrane under the shell off first too. Have fun cooking!
