Guanabana Sorbet

Description
Guanabana puree can be made from fresh fruit or purchased from Perfect Puree of Napa Valley.

According to Chef Nate, "If you've never tried guanabana you should now because it's a perfect fruit for drinking in the summertime. You know when you're looking for that perfect juice? one that isn't too sweet, too sour, too tart, just a perfect juice to satisfy your craving for an ice cold thirst quencher?well guanabana is it."

Servings:

Ingredients
3 pounds Guanabana Puree
2 cups Sugar
1 cup Water

Method
1. Puree guanabana in blender and pass through tamis (strainer). You will get about 50% yield on fresh fruit after peeling and passing.
2. Heat sugar and water in a small sauce pot and dissolve sugar completely.
3. Combine with Guanabana puree and freeze in machine.
