Irish Soda Bread

Servings: 4-6

Ingredients
2 cups flour
5 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. salt
4 Tbsp. butter, softened
1 cup milk
3/4 cup raisins

Method
Preheat oven to 375 F.

Lightly grease a 9" round cake pan or an 8 by 5" loaf pan.

In a medium mixing bowl, combine the dry ingredients (flour, baking soda, baking powder, salt and sugar). Using a butter knife, cut the butter into the dry mixture. ("Cut in" means cut little pieces, then, taking the knife, continue cutting the pieces of butter smaller until the butter is completely incorporated.) Make a well in the center of the bowl, and pour the milk into the well.

Gradually incorporate the milk into the flour mixture until it forms dough. With some flour on your hands, try to form a ball with the dough, and then flatten to fit your pan. Place in prepared pan, and sprinkle with a little sugar. Bake for 35-45 minutes. Check for doneness by inserting a kitchen knife. Serve slightly warm with butter.

** You may substitute chocolate chips for the raisins, to give you a different bread.


Do ahead: up to 6 hours. Warm in oven.
