Adzuki Beans with Raisins and Apple

Ingredients
5" kombu, soaked
2 cup adzuki beans, soaked ( or 1 can, rinsed well)
1 cup diced apple (green is best)
1 cup raisins, soaked
1/2 tsp sea salt
1/2 tsp cumin or 1/4 tsp dried ginger (not both)

Method
Drain kombu, beans and raisins, keeping water, combining all water. Bring pot to boil. Reduce heat to low. Add salt and cumin (or ginger). Cover and simmer until beans are cooked through.

Notes
Dried adzuki take 1 1/2 hours. Canned take less.
