| 10 lbs. Turkey 1 cup Yogurt 2 tsp. Garlic & Ginger Paste 1 ? tsp. Chili Powder 2 tsps. Coriander Powder 3 tbsp. Tandoori Powder Juice of two Limes Salt to taste 4-5 tbsp. Olive oil 1 small can Chicken stock For the Rub: 2 tbsp. Melted Butter 2 tsp. Salt and pepper |

| Choose a small turkey between 8-10 lbs (the smaller the turkey the more flavorful). Mix together all of the above ingredients in a bowl and set it aside. Remove the neck and giblets from the body cavity of the turkey and rinse under cold running water. Pat the turkey dry and place turkey breast side down on a large platter. Rub melted butter all over the turkey and inside cavity. Sprinkle salt and pepper on top of the turkey. Use your fingers to separate the skin from the bird and rub salt, pepper, and butter. With a sharp knife make small scores all over the turkey. Now pour the marinade over the turkey and make sure to rub the inside cavity of the turkey with the marinade. Marinate turkey for 24 hours in the refrigerator. Preheat oven to 350 F?. Add a small can of chicken stock to the bottom of a roasting pan. Place the turkey breast side down in the pan. Roast the turkey uncovered for 1 hour, then turn and continue roasting with breast side up for another 2 hours. Baste turkey every 30 minutes with basting mixture. Cook 8-10 lb turkey for 2 ? to 3hours. Cooking times are guidelines only. For Basting (Optional): Mix 3-4 tbsps. melted butter with 1 tsp. garam masala, 1 tsp. dry methi (fenugreek leaves), 2 tbsp. Lime juice, and some red food color to give the turkey the traditional red tandoori color. Baste every 20 minutes. |

| You can add small baby carrots, petite potatoes, button mushrooms and sausage links all around the turkey for the last one hour of cooking. When the turkey thermometer pops remove turkey from the oven and let it rest for 20minutes before serving.
