Refried Beans

Ingredients
1 pound dried pinto beans, soaked overnight
5 cups of water
2 tsp salt
6 slices of bacon, cooked crisp and finely diced*
2 Tbsp bacon drippings
1 medium onion, chopped
1 large clove garlic, minced

Method
Place all the above ingredients in a large pot. Stir and bring to a boil. gently simmer for 2 hours while covered, stirring occasionally and adding boiling water if beans become very thick. Simmer for an additional 2-3 hours uncovered. They should become the consistency of soup (not oatmeal as they will be mashed). Mash with a potato masher and serve.
