Clam and Bacon Dip

Description
Serve with pita and/or your favorite chips and crackers

Servings: 10-12

Ingredients
4 oz. slab bacon cut into ? inch cubes, or 8 slices thick cut bacon in 1/2 inch pieces
2 cups sour cream
two 6 oz. cans minced clams, drained, reserving 3 tablespoons liquid
1 tablespoon chopped fresh chives or scallions
2 tablespoons chopped flat leaf parsley
1 teaspoon fresh lemon or lime juice
3/4 teaspoon Worcestershire sauce
3-4 dashes Tabasco or favorite hot sauce

Method
Cook bacon in a pan over medium heat until crisp. Drain and blot on paper towels.


In a bowl whisk together all ingredients, except clam juice, until smooth. Add clam juice 1 tablespoon at a time checking consistency. Best made a day ahead.
