| 1 ripe avocado, cut into 1/4 inch dice Juice of 1 lime 1 ripe plum tomato, diced 1 tsp. brown sugar 1 Tbsp. fresh cilantro, chopped 3/4 cup frozen corn, defrosted and well drained 2 shallots, finely chopped 1 fresh jalapeno, seeded and finely chopped salt and pepper to taste |

Method |

| Place the avocado, lime juice, and tomato in a mixing bowl and gently toss, being sure to coat the avocado well with the lime juice. Add remaining ingredients. If you want to prepare a day ahead, combine all ingredients except the avocado. Dice and mix in the avocado before serving. |
