Featured Ingredient: Chorizo

Our famous butcher friend, Ted Dombrowski of Ted's Butcherblock in Charleston, SC is passionate about Spanish cuisine. "Spanish flavors and products are my favorites right now and are becoming as common as Italian foods" His favorite chorizo? Despana Brand Chorizo. It's the most flavorful and is perfection in my favorite chorizo recipe.

I render slices of chorizo in a pan over low heat, then remove the chorizo, turn the heat to high and deglaze with a Spanish white wine. Add little neck clams and cover, simmering until heated through. Of course stir in some butter at the end. It's an awesome dish just by itself but you must serve with some bread for soppin'.

Desano Chorizo

Some other favorite Spanish discoveries are fuet - a dry cured sausage. It compliments the nuttiness of Manchego perfectly. Of course, boquerones, which are delicate white anchovies packed in oil and vinegar are great on a platter. Speaking of which, be sure to try Lomo, a cured pork loin with a spicy seasoning on the outside. Combine all of these meats for a killer Spanish-style charcuterie platter. If you want to splurge and can find it - look for products featuring Iberico Hams. Truly the best ham in the world!
